The initial paper is a general review of the state of current knowledge of Omega-3 fatty acids, a current health issue. Other articles look at acrylamide in potato chips, a recent health issue, whilst more esoterically there is a paper on edible Irish seaweed and on the processing of chestnuts. There are also papers on packaging systems and on improved egg storage. Several papers on microwave techniques may interest processors.
