Delia Ojinnaka

I am a graduate of King’s College, University of London (BSc; Biology), Leeds University (MSc; Food Science) and Cranfield University (PhD; Rheological characterisation of microbial polysaccharides). Whilst at London South Bank University, I gained further qualifications; PGCHE in teaching and learning and PgCert (CPE) in legal studies.  I am a fellow (FIFST) of the Institute of Food Science and Technology, UK, a fellow (FHEA) of the higher education academy and a chartered scientist (CSci).  I am a member of the IFST accreditation panel and mentoring scheme.

My experience in food science, analysis, legislation and sustainability span over twenty five years. I am currently the Course Director of the immensely successful MSc in Food Safety and Control at London South Bank University (LSBU), UK.  I have been at LSBU since 1994.  I also coordinated the three-way, two years international master in Food Management and Safety that is taught by London South Bank University, the Institut National Polytechniquie de Lorraine (France) and Universidad Politecnica de Valencia (Spain). I have also taught at other institutions; the Federal University of Technology Owerri (FUTO), Nigeria and Queen Margaret University College, Edinburgh, Scotland.

I have taught food science and related subjects at various levels (HNC to PhD).  My specialist teaching subjects are food legislation and sustainability, food composition and analysis, food biochemistry and mechanical properties of food. I have   some publications on   characterisation of food biopolymers and food diversity. My current research is on analysis of heavy metals in Thai rice and acrylamide in foods. I give international lectures on food sustainability, food security, food labelling and food bioterrorism.

I am also actively involved in food, nutrition and lifestyle workshops in the community. I am the chair of the Food, Health and Lifestyle Forum, Enfield UK, admission’s appeal panel member (Enfield Council) and a school governor.
