Boxing Day leftovers are amazing. However, please be careful about how you store and reheat leftover food.

The correct storage of left overs can ensure they are safe to eat once properly reheated. The Food Standards Agency suggests all food is cooled, refrigerated and frozen if necessary within 1 – 2 hours after cooking. This is to prevent contamination by bacteria or spores.

Spores are like bacteria in hibernation. This means they wait around until they can germinate, grow and produce toxins (poison), both of which are resistant to heat.

Therefore, to ensure everyone stays healthy and happy during the holiday season, make sure you reheat all food until it is piping hot before anyone digs in!
