The aim of this webinar is to provide a thought-provoking look into allergen contamination in raw materials that results from comingling in primary production, cross contamination during initial processing and issues caused by poor or misunderstood documentation. The presentation will cover comingling examples from both field and sea settings, initial processing contamination of cereals and soya, as well as examples of 2 recalls caused by poor or misunderstood documentation. 

The presentation is designed to make individuals who work in the food industry and develop free from products in particular, to delve deeper into raw material supply chains and ask questions rather than taking supplier words as given.

An awareness of hidden allergens in the raw material supply chain.

Mr. Alexis Guest received the BSC in Industrial Food Technology from the University of Humberside, Grimsby in 1992, and HND in Quality Management from the University of Salford in 1998. In 1992, he joined Lyons Cakes as a junior microbiologist working with high risk foods and  worked his way through various roles from Hygiene Manager to Technical Manager within food businesses. His current role is in Group Compliance & Sustainability for a Food Ingredients business from Scotland where he has worked for over 10 years building a successful foundation for the group to develop to it next stage of its growth. He is on the board of the industry body Spice & Seasoning Association and as part of this was a full contributor to the writing of the GUIDANCE ON AUTHENTICITY OF HERBS AND SPICES endorsed by the FSA and BRCGS as good practice. Alongside this he has been a member of the IFST for the last 30 years and is now a Fellow and actively involved in the Scientific Committee looking at information for the wider food industry and the members as well as instigating within his business the competence matrix for professional development for the Technical Quality and NPD staff.


Speaker: Malcolm Laidlaw - Technical Consultant, ML3 Technical

Malcolm is an independent Food Safety Technical Consultant and Auditor, providing food safety technical support, documentation and training to ensure compliance to various recognised standards including Red Tractor, BRCGS Food and SALSA amongst others. He works with a number of clients across fresh produce and manufacturing sites. He has worked with a number of clients to implement free from standards and been involved in investigations into allergen related product recalls to identify the root cause. 

Abstract: It may seem obvious but without understanding the supply chain that your raw materials go though, you either won't know the real risks, or you will be relying on information from your suppliers. In this webinar, we look at several ways raw materials can become contaminated in primary production and initial processing prior to delivery to your site, and the impact of poor quality documentation / miscommunication from suppliers.
