UK team scoops the silver prize at the Ecotrophelia European finals

Congratulations to the Yasai team from the University of Reading who won the silver prize at the Ecotrophelia European finals. The team presented their product, veggie sushi-style rolls which are packed with locally sourced vegetables, including crunchy cauliflower rice, at the European Trophy Student Food Innovation awards held on 21 and 22 November 2017 at Food Matters Live.

Now in its fifth year, Ecotrophelia challenges teams of students from across Europe to develop an innovative, eco-friendly food and drink product. From idea generation through to the final packaged product, the teams get a hands-on experience of new product development.

The gold prize was awarded to the Greek team for their AVOYOG, ‘a functional eco-friendly innovative smoothie beverage from avocado and Greek yoghurt whey’. The bronze was presented to the team from Slovenia for their OnMyWhey, ‘unique whey based fruit dairy product with added millet which makes healthy snacking easy’.

The Yasai team previously won gold in June at the Ecotrophelia UK competition organised by IFST in conjunction with Campden BRI and sponsored by Marks & Spencer, Unilever, Coca-Cola, Sainsbury’s, PepsiCo, Tesco, Mondelez, Warburtons and Food Matters Live.

Andrew Gardner, IFST Operations Director, said, ‘We are very proud of Pav and Natasha. All their hard work under the expert guidance of their mentors has paid off. They have set the bar for the UK, so we are expecting great things in Ecotrophelia 2018!’.
