This webinar is organised by IFST Food Regulatory SIG and Food Science and Nutrition SIG
The use of AI is growing, from generating content, developing nutrition and health claims to personalised nutrition. Whilst enabling creativity there is also a need to protect the consumer. This webinar will give the opportunity to learn about these different areas of AI and how they are applied from a policy through to an industry level and how we can develop this area. Prior to the webinar there will be a short video outlining the different types of AI.

Dr Terri Grassby - IFST Food Science and Nutrition SIG Events Lead / Lecturer in Food Science Terri has almost 20 years of experience in academia, working as a PhD student, postdoc and then lecturer at Quadram, King’s College London and University of Surrey, respectively. She is a member of IFST and the Royal Society of Chemistry, which reflects her interest in food chemistry, particularly dietary fibre and polyphenols. She has been a lecturer at the University of Surrey for 9 years where she teaches on the MSc Food Science and BSc Food Science and Nutrition programmes and supervise PhD students. |

Eugenia Choi - IFST Food Regulatory SIG Events Lead / Senior Regulatory Affairs Professional Eugenia Choi, LLM, MSc, RNutr has over 10 years’ experience in the FMCG industry, initially as Nutritionist. Over the past decade, Eugenia has applied her background in regulatory affairs to provide strategic advice and compliant solutions, enabling successful innovations. As a Senior regulatory professional she has worked for some of the industry’s leading businesses including GSK and Merck as Regulatory Manager. As the Events Lead of IFST Food Regulatory SIG she brings together ideas of topical relevance to the sector and drives engagement through a series of talks and webinars. Previous events organised have ranged from due diligence to regulated products and novel foods and labelling with speakers ranging from academics, government and industry professionals. |

Dr Spencer Thomas - Senior Lecturer, University of Surrey and NPL Dr Spencer Thomas is a Principal Scientist in Digital Health and AI and is the Science Area Leader for 'Data, Analytics and Modelling' in the Data Science and AI Department. His expertise includes AI applications in digital health, in particular medical imaging and multimodal dataset, trustworthy machine learning and AI, and evaluation metrics for AI and real-world problems. Spencer has co-authored over 75 peer-reviewed publications and reports, is a Senior member of the IEEE, a member of IPEM (Institute of Physics and Engineering in Medicine), part of an AI think tank for medical imaging with UK healthcare stakeholders, part of the AI for Decarbonisation’s Virtual Centre of Excellence (ADViCE) working group led by the UK government and an associate editor of the Complex and Intelligent Systems journal. |

Carrie Speer - Senior Investigations Executive, Advertising Standards Authority (ASA) Carrie joined the ASA’s Investigations team in 2010. Since 2013, she has specialised in the advertising rules for food and drink, including health and nutrition claims, ads for products high in fat, salt or sugar (HFSS), and formula milk advertising. As a Senior Investigations Executive, she manages casework and provides technical advice and training to support the wider team. |

Adam Davison - Head of Data Science, Advertising Standards Authority (ASA) Adam joined the ASA in 2021 and leads the Data Science team, which is responsible for developing AI and Machine Learning solutions to support the regulatory work of the ASA. Originally from a background in academic research with a PhD in Physics, Adam has lead data science teams in online retail and publishing prior to joining the ASA |

Dr Danielle McCarthy - Chief Health Officer, Spoon Guru Professor Danielle McCarthy, PhD, RNutr is Chief Health Officer at Spoon Guru, where she leads the development of robust AI-driven solutions to support healthier decision-making across the food system. She is also Co-Founder & Director of Nutrition Talent and Honorary Professor of Practice at Queen’s University Belfast. An applied nutrition scientist, Danielle has held senior roles across the food sector, including Head of Nutrition at Sainsbury’s and Principal Scientist at GSK. Her work focuses on translating nutrition science into scalable impact for human and planetary health, while championing and empowering nutrition professionals throughout their careers. |
