Anna-Sophie Deetjen - Founder, Nibblr Anna-Sophie Deetjen is the founder of Nibblr, an AI-powered platform transforming how food and beverage companies reformulate and innovate. Her path into food innovation began with her own curiosity about healthier products, which deepened when she became a founder herself. She quickly discovered how fragmented, resource-intensive, and inefficient product development can be, requiring endless searches for expertise, navigating compliance hurdles, and investing heavily just to move forward. Experiencing these challenges firsthand sparked a fascination with the mechanics of how food products are made, scaled, and launched. Her first venture, Morrow, focuses on developing coffee without coffee beans, which is an ambitious project rooted in deep R&D and the vision of decoupling beloved foods from environmentally fragile supply chains. While Morrow continues to push forward, her experience highlighted a broader systemic problem: the lack of accessible, data-driven tools to make food innovation faster, smarter, and more cost-effective. Her own challenges and learnings, led Anna-Sophie to create Nibblr, which leverages AI to help brands reformulate products that balance taste, nutrition, and costs. By streamlining decision-making across science, supply, and consumer demand, Nibblr empowers companies to accelerate development and bring healthier, more resilient products to market. Tom Æ Hollands Honorary FIFST - Director, Alyn Tom Æ Hollands is a director of Alyn, which is a joint venture between Software Imaging and Raynor Foods. He is also the Innovation and Technical Director at Raynor Foods, which is a large food manufacturing based in Chelmsford. Tom is an accomplished Food Scientist who has worked in both government (Food Standards Agency) and the private sector. Tom is a true innovator at heart and has won many national and international accolades, last year he was awarded with the Honorary Fellowship from the Institute of Food Science and Technology (IFST), in recognition for his extraordinary contributions to the IFST and wider food system as a food scientist and innovator. Tom’s innovations are focused on sustainability and meta food systems, their emerging technologies and the fascinating and complex links that join them.
