Can foodborne viruses really fit into food safety systems designed around bacterial hazards?

In this webinar, the presenter will use examples of known viral infections and outbreaks to highlight the challenges of applying food safety systems and assumptions that have traditionally been developed to manage bacterial hazards to foodborne viruses, which behave in fundamentally different ways.

What participants will learn:
  • How viruses enter the food chain
  • Where conventional bacterial control assumptions begin to break down
  • The role of food handlers, fresh produce, shellfish and animal-derived foods
  • What molecular detection can and cannot tell us
  • The limitations of finished-product testing
  • What practical controls are most effective
  • The impacts of climate change

Target audience:

  • Students, Quality Managers, Technical Managers, Food Technologists, Food Technologists, Engineers and Production Managers, HACCP team members. Consultants and Lecturers
